Palawan Seafood Stew with roasted cashew nut

Do you know that Palawan, Philippines Top Dishes and delicacies are SEAFOODs & CASHEW? Yes! it is! Palawan is the Cashew capital of the Philippines, 90% of Country's annual production came from Palawan. This is my first seafood recipe that i'd love to cook repeatedly. I hope you try this one as well.


INGREDIENTS

  1. (2-3) Cloves of Garlic – finely minced

  2. (1) Onion (brown or red) – finely diced

  3. (1/2) Red Bell Pepper – finely diced

  4. (1/4) Green Bell pepper – finely diced

  5. (1/2) Cup- crushed tomatoes in can

  6. (1) pc – fresh tomato-finely diced

  7. (1) pcs medium of Squid – chopped same as calamari type

  8. (2) pcs medium size crab – slice into 2

  9. (8) medium size Shrimp (peeled and deveined) – anyway you can choose any size you want

  10. (8) Fresh Mussels

  11. (1) Tsp Dried Thyme

  12. (1) Tsp Smoked Paprika

  13. Saffron in thread

  14. (1/2) Tsp White Sugar

  15. (750ml shrimp broth

  16. (1/4) Cup Water

  17. (10) pcs roasted cashew nuts

  18. (4) Tbsp Extra Virgin Olive Oil

  19. Sea Salt

  20. Fresh Parsley


INSTRUCTIONS


1. Heat a large non-stick frying pan with a medium heat and add 3 tablespoons of extra virgin olive oil to the pan.


2. Once the oil gets hot, season it with sea salt and add the squid rings, cook for about 1-2 minutes, remove from the pan and set aside.


3. Add the diced onion to the pan and cook until translucent, then add the minced garlics and cook for about 30 seconds, add the diced bell pepper (red & green) and mix everything together and cook for about 3 minutes.


4. Add dried thyme, smoked paprika, a pinch of sea salt and mix everything together.


5. Next add crushed tomatoes and fresh tomatoes, white sugar, a pinch of sea salt and mix everything together.


6. After cooking the tomatoes for about 5 minutes, add shrimp broth to the pan, water, saffron (soaked 20minutes in a cup of hot broth) and gently mix all the ingredients in the pan and turn up the heat to a medium-high.


7. Once it begins to boil, lower the heat and let it simmer.


8. In a mortar, put all together the roasted cashew nuts & 2 tbsp. chopped fresh parsley and mash together until form a paste, then add remaining virgin olive oil, mix well & add to the pan.


9. Simmer for about 10-15 minutes, add the crab and cook for 8-10 minutes, add mussels, squid & shrimp and cover the pan and cook for about 4-5 minutes until all the mussels should be open.


10. Remove from the heat. Enjoy!
